Beef Stir Fry With Sweet Potato Noodles & Kale

- 1 tablespoon canola oil
- 1 (16-ounce) package Certified Piedmontese grass fed, grass finished stir fry beef, cut into bite- size pieces, lightly seasoned with salt and pepper
- 1 large sweet potato, spiralized
- 1½ cups fresh kale, veins removed and chopped into bite-size pieces
- Sesame seeds and chopped green onions, for garnish (optional)
For the sauce:
- 1½ tablespoons cornstarch + 2 tablespoons water
- ¼ cup orange juice
- 1 tablespoon chili oil
- ¼ cup low sodium soy sauce
- 1 tablespoon honey
- 3 cloves garlic, minced
Prepare the sauce: In a medium bowl, make a slurry with the cornstarch and water. Add the orange juice, chili oil, soy sauce, honey, and garlic. Whisk ingredients together and set aside.
In a large skillet over medium heat, heat the oil. Add the beef and cook until the meat is browned on all sides. Add the sweet potatoes noodles and cook for 2 to 3 minutes.
Add the sauce and stir to coat the meat and vegetables. Bring the sauce to a boil. Once the sauce has reduced, lower the heat and allow sauce to thicken before serving.
Add the kale and stir until garnish with green onion or sesame seeds if desired.
