Coffee-Red Wine Reduction Sauce

Ground coffee adds depth and body to this traditional red wine reduction. Serve over your favorite Certified Piedmontese steak.
- 2 cups red wine
- 2 tablespoons ground coffee beans
- 2 tablespoons demi-glace
- 1 garlic clove
- 1 shallot, roughly chopped
- 2 sprigs fresh thyme
- 1 teaspoon whole peppercorns
- 1 bay leaf
- Salt, to taste
- ½ teaspoon sugar
In a saucepan, combine all ingredients. Bring to boil, then let simmer until nappe (thick enough to coat the back of a spoon). Remove from heat and adjust seasoning with salt and pepper. Strain with a fine chinois or fine-mesh strainer and serve with steak.
