Ginger, Cilantro, Lime & Sweet Onion Rub

This rub is ideal for sirloin. The aggressiveness of the flavors will tenderize and carry flavor to the center of the steak. Because the rub is not pureed, you will not have to worry about burning the outside of the steaks during longer cooking times.
- 1 ounce fresh ginger, finely diced
- ½ bunch cilantro, chopped
- 4 limes, juiced and zested
- ¼ sweet onion, finely diced
- 2 cloves garlic, finely diced
- 1 tablespoon honey
- 1 tablespoon olive oil
- ¼ teaspoon salt
Combine all ingredients and mix to incorporate. Rub steaks about one hour before grilling, using only enough to coat the steak. (This recipe should be enough for about four steaks.)
