Kale Caesar With Everything-Spiced Croutons

Savory homemade croutons are the perfect partner for fresh kale, romaine, and an easy homemade Caesar dressing (that you'll definitely want to keep on hand). This is a salad worthy of seconds.
For The Croutons:
- 3 cups French bread, torn into small pieces
- 2 tablespoons olive oil
- 2 teaspoons minced dried onion
- 2 teaspoons sesame seeds
- 1 teaspoon poppy seeds
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
For The Dressing:
- 2 cloves garlic, peeled
- 4 anchovy filets
- Juice of 1 lemon
- ¼ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon white wine vinegar
- 1 tablespoon Dijon mustard
- ? cup grated Parmesan cheese, plus more for serving
- ? cup olive oil
- Salt and freshly cracked black pepper, to taste
For The Salad:
- 2 bunches kale, stemmed and chopped
- 1 large head Romaine lettuce, chopped
Preheat oven to 350°F. Add bread to a large bowl and drizzle with olive oil; toss to coat. Add seasonings and toss again. Transfer bread to a baking sheet in an even layer and bake 10 minutes, or until golden-brown.
In the bowl of a food processor, combine the dressing ingredients (garlic, anchovies, lemon juice, yogurt, mayonnaise, vinegar, Dijon, cheese, olive oil, salt, and pepper). Pulse until smooth.
In a large bowl, combine the kale, Romaine, dressing, and half the croutons and toss to combine. Transfer the salad to a serving bowl and top with more croutons and parmesan.
