Shaved Kale, Fennel & Pear Steak Salad

This crisp and fresh winter salad—starring tender steak, fennel, pear, and pine nuts—brings the perfect balance of flavors and textures to the table.
- Kale; washed, de-stemmed, and chopped
- Shaved fennel
- Asian pear; peeled, cored, and thinly sliced
- Toasted pine nuts
- Leeks, thinly sliced and sautéed
- Certified Piedmontese flank steak, grilled or broiled and sliced
Simple Vinaigrette
- ½ cup olive oil
- 3 tablespoons champagne vinegar
- 3 tablespoons red wine vinegar
- ½ teaspoon stone ground mustard
- ½ teaspoon maple syrup
- ½ teaspoon salt
Combine all ingredients in a bowl or jar and whisk or shake until emulsified.
