Spinach & Steak Salad With Roasted Sweet Potatoes & Farro

A simple and spicy vinaigrette adds the right amount of kick to this hearty salad—ideal for lunch or dinner.
- Sweet potatoes, cubed and roasted
- Red onion, thinly sliced and roasted or pickled
- Cooked farro
- Baby spinach
- Certified Piedmontese flat iron steak, grilled or broiled and sliced
Spicy Vinaigrette
- 4 tablespoons red wine vinegar
- ? teaspoon cayenne pepper
- 1 teaspoon minced garlic
- ¾ cup olive oil
- 2 tablespoons lemon juice
- ½ teaspoon salt
- ¾ teaspoon pepper
Combine all ingredients in a bowl or jar and whisk or shake until emulsified.
