Spinach & Steak Salad With Roasted Sweet Potatoes & Farro

A simple and spicy vinaigrette adds the right amount of kick to this hearty salad—ideal for lunch or dinner.

  • Sweet potatoes, cubed and roasted
  • Red onion, thinly sliced and roasted or pickled
  • Cooked farro
  • Baby spinach
  • Certified Piedmontese flat iron steak, grilled or broiled and sliced

Spicy Vinaigrette

  • 4 tablespoons red wine vinegar
  • ? teaspoon cayenne pepper
  • 1 teaspoon minced garlic
  • ¾ cup olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¾ teaspoon pepper

Combine all ingredients in a bowl or jar and whisk or shake until emulsified.
