Makes enough rub for 6 to 10 steaks
- ½ cup ancho chile powder
- 2½ tablespoons smoked paprika
- 1½ tablespoons dried oregano
- 1½ tablespoons ground mustard
- 1½ tablespoons ground coriander
- ½ tablespoon ground cumin
- ¼ cup salt
- ½ tablespoon black pepper
- Zest of 1 lime
Combine all ingredients in a medium container. Rub over all sides of steak. Let steaks rest for 15 to 20 minutes at room temperature before grilling. Store extra rub in a sealed container for up to six months.
