Chipotle-Tequila Marinade

Makes about 3½ cups

  • 2 chipotle peppers
  • 2 serrano peppers
  • 4 cloves garlic
  • 2 bunches cilantro (approximately 4 ounces)
  • ½ cup lime juice
  • 2 tablespoons lime zest
  • ¼ cup orange juice
  • 2 tablespoons lemon juice
  • ¾ cup tequila
  • 1 cup water
  • ½ cup brown sugar

In the bowl of a food processor, combine all ingredients and blend until fully incorporated. Refrigerate until needed. To marinade, submerge meat in marinade, cover, and refrigerate for 4 hours or overnight.
