  • ½ cup olive oil
  • 3 large onions, julienned
  • 4 garlic cloves, roughly chopped
  • 2 sprigs thyme
  • 1 tablespoon minced ginger
  • ½ cup chopped green onions
  • ¼ cup miso paste*
  • ½ cup rice wine vinegar
  • 1 tablespoon wasabi paste
  • 1 tablespoon honey
  • ¼ cup fresh cilantro leaves
  • Salt, to taste
  • Pepper, to taste
  • *Miso paste is a blend of fermented soybeans that is a staple in Japanese cuisine. Its flavor is potent and somewhat salty that can vary in complexity from mild to highly concentrated. Look for it on the specialty foods aisle, at Asian grocers, or online.

Heat the olive oil in a large saucepan over medium heat, then add onions and garlic. Cook until onions caramelize and are golden brown. Add thyme, ginger, and green onions and cook for 5 additional minutes before adding miso paste. Deglaze with vinegar and add wasabi paste. Transfer into a blender or food processor and blend into a smooth paste. Scrape into a bowl, then add honey and fold in fresh cilantro. Adjust seasoning with salt and pepper. Transfer to a sealed container and refrigerate until ready to serve.
