Roast Beef Wraps with Avocado, Cheddar and Sriracha Mayo

These simple wraps come together quickly, thanks to the convenient addition of Certified Piedmontese deli-style roast beef.

  • ½ pound thinly sliced Certified Piedmontese classic roast beef
  • Sea salt and freshly ground black pepper to taste
  • 2 (10- to12-inch) whole-wheat wraps
  • 2 tablespoons Sriracha Mayo (recipe follows)
  • 4 thin slices sharp cheddar cheese
  • ½ avocado, pit removed, peeled, and thinly sliced
  • 4 leaves romaine lettuce
  • 2 thin slices red onion
  • 1 cup jalapeño potato chips

Season the roast beef with salt and pepper. Place the wraps flat on a work surface and spread evenly with the Sriacha mayo. Layer the cheese, roast beef, avocado, lettuce, onion (separating the onion slices), and chips in the center of each wrap. Fold in the sides and roll up tightly. Cut each wrap in half and serve cold or at room temperature.

    • Sriracha Mayo
    • Makes about 1 cup
    • ¾ cup mayonnaise
    • 2 tablespoons Sriracha hot sauce
    • 1 tablespoon lime juice
    • 1 teaspoon honey
    • Sea salt and freshly ground black pepper to taste

    In a small bowl, combine the mayonnaise, Sriracha, lime juice, honey, salt, and pepper and stir to combine. Store refrigerated until ready to serve or up to 5 days.
