  • 2 whole shallots, thinly sliced
  • 2 tablespoons olive oil
  • ½ cup Madeira wine
  • 1 cup veal or beef stock
  • 3 sprigs fresh thyme
  • 2 tablespoons cream
  • Salt and pepper

In a 1-quart saucepan over low heat, add olive oil. Add shallots and sauté until translucent. Add Madeira, stock, and thyme. Continue cooking until liquid is reduced by half. Add cream, salt and pepper to taste.
