Serves 8 to 10

  • 2 pounds Certified Piedmontese stew meat, diced into small pieces
  • 3 tablespoons olive oil
  • ½ cup diced onions
  • ½ cup diced celery
  • 1 cup diced red bell peppers
  • 1 tablespoon minced garlic
  • ½ teaspoon chili powder
  • 1 tablespoon taco seasoning
  • ½ teaspoon smoked paprika
  • 2 tablespoons Tabasco sauce
  • 1 tablespoon oregano
  • 1 cup diced tomatoes, plus juice
  • 1 can kidney beans, plus any liquid
  • ½ cup mild tomato salsa
  • Salt
  • Pepper
  • ½ cup sour cream, for serving
  • ¼ cup chopped cilantro, for serving
  • ½ cup lemon wedges, for serving

To a hot skillet, add 2 tablespoons of the olive oil and stew meat. Cook the stew meat until nicely browned all over, then transfer to a crockpot.

To the same skillet, add remaining tablespoon olive oil, all of the vegetables, and garlic, and cook until softened. Transfer vegetables to the crockpot and add the rest of the ingredients except the sour cream, cilantro, and lime. Cook in the crockpot for 4 hours on low heat. Taste and adjust seasoning with salt and pepper. Serve with sour cream, chopped cilantro, and lime wedges.
