This Japanese-inspired dish is easy to make and can even be prepared in a slow cooker! Try this ramen recipe to satisfy a craving on a cozy night in (or to impress guests at a dinner party!).
INGREDIENTS
- 1 pound beef stew meat
- 2 tablespoons avocado oil or extra light olive oil
- 1 onion, diced
- 1 tablespoon garlic, chopped
- 14–15 oz dark beer – use a dark beer for this recipe such as this one.
- 64 oz beef stock
- 8 oz mushrooms, sliced
- 1/3 cup soy sauce
- 4–6 blocks of ramen noodles
- Topping ideas: green onion, seaweed chips, soft-boiled eggs, shredded carrots, edamame
DIRECTIONS
1) Heat the olive oil in a large Dutch oven or pot over medium heat. Working in batches, sear the stew meat on all sides. Transfer to a plate and set aside.
2) Add onion, garlic, and mushrooms and lightly sauté until fragrant. Deglaze the pot with the beer, gently scraping up any browned bits from the bottom of the pan.
3) Pour in the beef stock and soy sauce. Add the beef back in. Bring to a boil and then reduce the heat and allow to simmer for 2 hours, or until the meat is tender and cooked through.
4) Cook the ramen noodles according to the package directions. Layer the noodles in your bowl, followed by pieces of beef and mushrooms, then top with the broth. Top with desired toppings and dig in!
