Steak Scampi

Steak Scampi

    INGREDIENTS

    • Steak
    • Please choose your favorite steak cut and cook it to your desired doneness.

    • Scampi Sauce
    • A beautiful garlic, chili, and white wine butter sauce.
    • 1/4 Cup of fresh chopped parsley
    • 2 Sliced garlic cloves
    • 2 Tsp red chili flakes
    • Juice of a lemon
    • Zest of a lemon
    • 1/4 Cup butter
    • 1/4 Cup white wine
    • 1 Tbsp extra virgin olive oil
    • Salt
    • Pepper

    DIRECTIONS

    Steak/Sous Vide Sirloins

    1) Pre-Season (2) 8oz. sirloins and re-packaged within sous vide bags or a vac-sealed bag.

    2) Cook to 125 F for about 2 hours. Open the package and pat the steaks dry with a paper towel.

    3) In a hot pan, sear the steaks in a high heat oil, like Canola, for 1-2 minutes a side until you develop a perfect crust.

    4) Remove the steaks from the heat and let them rest while you build the scampi sauce.

    Scampi Sauce

    1) On medium heat, add a tbsp of EVOO (extra virgin olive oil)

    2) Add in your sliced garlic cloves and lightly fry until fragrant.1 minute or so

    3) Add in your red chili flakes, then the white wine. Simmer & Reduce the wine for about 2 minutes.

    4) Turn off the heat, and swirl in your butter. Once melted, add in your lemon juice, zest, and parsley.

    5) Add salt and pepper to taste.

    6) Pour over your beautifully cooked steaks!
