Arugula Steak Salad With Oranges & Pomegranate

Peppery arugula, savory steak, juicy orange slices, and tangy pomegranate seeds come together for a light and bright winter salad that’s perfectly balanced when paired with our lemon-ginger poppy seed dressing.
- Arugula
- Orange slices; peel, pith, and membranes removed
- Pomegranate seeds
- Red onions, fresh or pickled
- Sliced or slivered almonds
- Certified Piedmontese center-cut ribeye steak, grilled or broiled and sliced
Lemon-Ginger Poppy Seed Dressing
- 3 tablespoons lemon juice
- 2 tablespoons honey
- 1 tablespoon grated or minced ginger
- ½ cup olive oil
- 1 teaspoon poppy seeds
- ½ teaspoon salt
- ½ teaspoon pepper
Combine all ingredients in a bowl or jar and whisk or shake until emulsified.
