- Pan-seared Certified Piedmontese sirloin, sliced against the grain
- Red cabbage, thinly sliced
- Carrot, grated
- Cucumber, sliced or chopped
- Celery, chopped
- Fresh or roasted jalapeños, sliced
- Tomatoes, chopped
- Mint, cilantro, and Thai basil, chopped
- Sugar snap peas
- Roasted peanuts or cashews
- Rice noodles, cooked
Combine all ingredients and toss in Spicy Asian Vinaigrette (recipe follows).
Spicy Asian Vinaigrette
- Juice and zest of 2 limes
- 2 tablespoons water
- 2 tablespoons rice wine vinegar
- 2 tablespoons sesame oil
- 1½ tablespoons grated fresh ginger
- 1 garlic clove, minced
- 1 teaspoon red pepper flakes
- Salt to taste
In a small bowl, whisk together all of the ingredients and season with salt to taste.
