Makes enough marinade for 32 ounces of steak
- 1 small shallot, chopped
- 2 cloves garlic, chopped
- 1 cup strong coffee, room temperature
- ¼ cup balsamic vinegar
- ¼ cup Dijon mustard
- ¼ cup (packed) brown sugar
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 4 (8-ounce) Certified Piedmontese steaks, or 32 ounces of your favorite Certified Piedmontese beef cut
In a medium bowl, whisk together shallot, garlic, coffee, vinegar, mustard, brown sugar, oil, and pepper. Divide the meat evenly between two large re-sealable plastic bags (two steaks in each bag) and pour the marinade over top. Turn the meat to coat. Seal and refrigerate for at least 4 hours and up to 24 hours.
