Creamed Spinach

- 2 tablespoons butter
- ½ cup diced shallots
- 1 tablespoon minced garlic
- 1 teaspoon fresh thyme
- 1 pound chopped fresh spinach
- 1 cup cream
- Salt
- Pepper
- 2 tablespoons sour cream
In a medium saucepan, melt butter, then add shallots, garlic, and fresh thyme. Sauté for 2 to 3 minutes, then add spinach. Cook for 5 minutes, then add cream and reduce by half. Remove from heat, season with salt and pepper, and fold in sour cream.
