Healthier Beef Tacos

Make tacos healthier by using crunchy shells instead of flour tortillas, and plenty of fresh veggies for crunch and flavor. And don’t forget the beef! Certified Piedmontese offers 95% lean ground beef!
- 1 pound 95% lean Certified Piedmontese ground beef
- 1 small white onion, diced
- ½ teaspoon salt
- 1 teaspoon cumin
- 2 teaspoons chile powder
- Dash cayenne pepper
- 12 yellow corn taco shells
- 2 cups green leaf lettuce, shredded
- 1 cup red cabbage, shredded
- 1 cup diced tomatoes
- 1 cup pepper jack cheese
Heat a non-stick, medium sauté pan over medium-high heat. Brown ground beef in the pan until fully cooked. Add diced onion and continue cooking until onions are translucent. Add salt, chile powder, cumin, and cayenne and mix well.
Stuff each taco shell with 3 to 4 tablespoons of meat and garnish with green leaf lettuce, red cabbage, diced tomatoes, and shredded pepper jack cheese.
