Steak Tip Skillet With Sweet Potatoes

Serves 4

1. In advance, pre heat oven to 400 degrees.

2. Wash and chop 12 ounces of sweet potatoes into cubes.

3. Wash and chop 12 ounces of Brussels sprouts into halves.

4. Place both on a baking sheet and coat the sweet potatoes and Brussels sprouts with avocado oil.

5. Bake for 15 minutes.

6. Heat small amount of avocado oil in the cast iron on the stovetop on medium, and add steak tips.

7. Sprinkle steak tips with berbere seasoning and cook steak until medium rare. Remove the steak tips and place to the side.

8. Add one tablespoon of avocado oil to the cast iron, and toss in 1/2 a chopped onion and 3 medium peppers cut into thin slices.

9. Cook peppers and onions for 4 minutes and add a garlic clove minced. Cook for another 3 minutes on medium low.

10. Place the steak tips back into the mix and let them finish cooking with the vegetables.

11. Add the sweet potatoes and Brussels sprouts.

12. Enjoy!
