Traditionally served in a double Old Fashioned glass and topped with crushed or shaved ice, this drink is the perfect refreshment for a hot day. Make the simple syrup ahead of time for added convenience.
- 4 cubes fresh watermelon (per cocktail)
- Mint leaves
- 2 parts bourbon
- 1 part simple syrup (recipe follows)
In a blender or food processor, blend the watermelon cubes, then strain through a fine-mesh sieve. Muddle a few mint leaves in the bottom of a double old fashioned glass. Add the bourbon, mint simple syrup, and watermelon puree. Stir to distribute the mint. Garnish with a mint sprig and top the glass with crushed ice.
Mint Simple Syrup
- 2 cups water
- 1 cup sugar
- 8 mint leaves
In a small saucepan over medium heat, bring the water and sugar to a boil, stirring occasionally until the sugar has dissolved. Remove the pan from the heat and add the mint leaves. Let the syrup cool, then strain out mint leaves.
