Meatballs

  • 1 lb Certified Piedmontese Ancestral Blend
  • 2 large eggs
  • ¼ cup heavy cream
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp finely chopped fresh parsley
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tbsp olive oil (for searing)

Honey Garlic Glaze

  • ¼ cup honey
  • 2 tbsp soy sauce
  • 2 tbsp ketchup
  • 2 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tsp cornstarch
  • 1 tbsp water

Directions

Step 1: Prepare the Meatball Mixture

In a large mixing bowl, whisk together the eggs and heavy cream until well combined.

Add the panko breadcrumbs and let the mixture sit for 2–3 minutes to allow the breadcrumbs to absorb the cream. This simple step creates exceptionally tender meatballs.

Add the Ancestral Blend, Parmesan, garlic, parsley, onion powder, smoked paprika, salt, and pepper.

Using clean hands, gently mix until everything is just combined. Avoid overmixing, as it can make the meatballs firm.

Roll into approximately 18–20 meatballs, about 1½ inches in diameter.

Step 2: Pan-Sear the Meatballs

Heat the olive oil in a large skillet over medium heat.

Place the meatballs in the skillet, leaving a little space between each one.

Cook for 8–10 minutes, turning every few minutes until they're evenly browned on all sides and reach an internal temperature of 160°F.

Transfer the cooked meatballs to a plate.

Step 3: Make the Honey Garlic Glaze

Reduce the heat to medium-low.

In the same skillet, whisk together the honey, soy sauce, ketchup, garlic, apple cider vinegar, and crushed red pepper flakes.

Mix the cornstarch and water together until smooth, then stir it into the sauce.

Let the glaze simmer for 2–3 minutes until it becomes glossy and slightly thickened.

Step 4: Finish the Meatballs

Return the meatballs to the skillet and gently toss them in the glaze until evenly coated.

Cook for another 2–3 minutes, allowing the glaze to caramelize around the meatballs.

Serve immediately.
