by Johnny Loua, Chef, Seattle, Washington

- 2 (8-ounce) Certified Piedmontese beef patties
- 3 tablespoons goat cheese
- ¼ cup fresh spinach, chopped
- 1 tablespoon chopped fresh herbs
- 2 hamburger buns
- Toppings of your choice
Preheat grill to 400°F.
In a small bowl, combine the goat cheese, spinach, and fresh herbs.
On a cutting board or piece of parchment paper, flatten each ground beef patty slightly. Divide the cheese mixture and pile in the center of each burger. Fold the edges of the burger over and around the filling, pinching and pressing gently to seal.
Lightly oil the grill grates. Grill the burgers approximately 6 minutes per side, or until desired doneness.
